Reviewing Bubba’s Burger Shack: Home of the buffalo burger in Houston.
Bubba’s Burger Shack has been located on the side of the highway near the Galleria Mall in Houston since 1985. This shack was originally a key shop before becoming a hot spot for some gourmet buffalo burgers, beer, and outdoor seating. Bubba’s is a small place big on being the best at what they do, which has worked out for them for almost four decades. The founder of this establishment was a man named Bubba Gillham. However, a frequent customer named Richard Reed decided to buy the business in 1990 since Mr. Gillham was trying to sell it. Reed loved the burgers here, retired from his oil job, and made his ownership of Bubba’s Shack his main priority.
Mr. Reed’s kids eventually helped him out so he could retire comfortably and plan to get them to takeover one day in the future. It is uncertain as to what changes have been made involving this cafe, but the consistency of their burgers and loyal customers remains the same. The hours of operation are 11 a.m-9 p.m. every day. Along with burgers, the menu also consists of bison chili, bison hotdogs, grilled cheese, and Frito pies.
Bubba’s Shack looks like a small, run-down place when driving by or in its rocky parking lot. It is not extravagant or enticing in its outer or inner appearance. Numerous people, including myself, have driven past this place not knowing what to think of it. Like those same people over time, I eventually tried it in recent years. Bubba’s Shack offers a walk-in experience to purchase orders, but they also have a shaded patio outside that is comfortable for customers wanting less Texas heat.
This place is mostly known for the flavors and quality of its burgers rather than the experience of a full-service restaurant. Eating a simple, but remarkable sandwich while enjoying outdoor seating or watching a ball game on a big-screen television set is meant to be a fun, casual activity above anything else. Bubba’s is also a fair consideration for people wanting a bite before heading to the mall a couple of minutes away or for those desiring some food near the hotels down the street
I drove to Bubba’s Shack this past Wednesday after my dentist appointment for my biyearly cleaning. I ordered their buffalo hamburger to-go, which came with lettuce, tomatoes, and a little bit of mustard. I had not been here in a year and really missed it. Like previous visits, my burger had the same overall taste in terms of both seasoning and rich meat flavor. It was unbelievably delicious and had a great texture too. The meat was lean, somewhat gamy, juicy, and thick without being greasy or processed in taste. This burger tasted like it was made with love from a secret recipe passed down through the generations. From my experience, this was the best buffalo burger I have had down here. The meat patty was very fresh and all natural, unlike the processed types.
The burgers, options, prices, and service at Bubba’s Shack are all exceptionally good. They even offer several toppings, carb sides, and beverages to choose from. My hamburger was $9 and a considerable size with superb preparation and quality. As always, the staff was efficient and helpful with suggestions and questions on menu items.
