Reviewing Blood Bros BBQ: BBQ in Houston, TX.

Blood Bros BBQ is owned by three friends who grew up in the Alief area of Houston. It opened its doors in late 2018 and specializes in Texas barbeque as well as some Asian and Cajun fusion dishes. Except for Mondays and Tuesdays, they are open 11 a.m.-3 p.m. They offer both lean and moist cuts of brisket, two kinds of sausage, and three kinds of ribs including pork, Asian style, and beef. The beef ribs are only available on Saturdays until they run out. They offer a couple of sauces with their barbecue, including a tomato-based sauce and a mustard-based sauce, both of which have a mild spicy and slightly sweet flavor. Blood Bros BBQ has received multiple awards for selling excellent barbecue and providing superb business to customers.

Blood Bros BBQ has an interesting setup with a large artistic sign and a hidden interior from the outside. When you walk in, you’ll notice the casual design and mild-mannered vibe. The inside is perfect for small groups to be seated at tables or booths. This place is dimly lit, and a smoky smell intoxicates barbecue lovers in the most pleasing way. Blood Bros has the atmosphere and style of a small popular burger or wing joint. It is not fancy, but it is clean and has a fitting aesthetic. Besides, I’d say it’s more of a destination for the food itself rather than the scenery.

I ordered an a la carte plate of lean brisket and ribs during my last visit. The brisket order was awesome with a strong smoky flavor and tasty seasoning. It was lean, but it was by no means dry or tough. It was very juicy and had an impressive bark on the rim of each slice. The brisket slices also had a nice pink smoke ring near the bark, which is a great sign of a well-prepared Texas-style brisket. The flavors were very prominent and exciting. There were no chewy parts on any of the pieces, making my money spent even more worth it. Blood Bros BBQ obviously uses top-notch brisket for their barbecue due to the natural flavor, fat content, and thickness of each slice. My meat order was not too fatty, but it did have a little bit of marbling near the bark. Sauce was not needed for the brisket or ribs; however, I always prefer some with my barbecue.

The ribs in my order were smoky, juicy, and fall-off-the-bone tender. They were fantastic and some of the best ribs I have ever eaten. The bark on the top was peppery and there was a great amount of moisture in the meat. I have not yet been able to get a hold of their beef ribs, but I will one day when they are available. The brisket is their top seller as most good barbecue places in Texas, but the ribs sell out quicker from my experiences at this restaurant.

The service was hospitable, efficient, and friendly on my last visit here. The staff are knowledgeable about their products and helpful with questions. Blood Bros BBQ does not do delivery or over-the-phone orders, but customers can call and ask if a certain menu item is still available that day. Be aware that it is first come, first serve and the lines can be long some days. But their system of customer service keeps crowds moving smoothly without too much clutter. The food is always freshly prepared. To top it off, they offer a variety of cold drinks and beers to quench the thirst from the Texas heat and savory meat orders.
